Trim and Cube the Pork Belly - Trim the excess fat and cube the pork belly into bite-sized pieces, about 3cm in size.

Make the Dry Rub - In a bowl, mix the brown sugar, paprika, kosher salt, garlic powder, onion powder, and black pepper to create the dry rub.

Season the Pork Belly - Coat the cubed pork belly with the dry rub, making sure each piece is well coated. You can either dust each cube or toss them in the bowl of your spice mixture
